"Automatically accept a security certificate, even if invalid" is an option that was specifically made to bypass invalid SSL/TLS certificates and certificates that Java can't validate (usually because Java has no root certificate for the given certificate hierarchy).
It's not really an option that you should keep on in normal circumstances, it's meant for debugging or quickly getting around such a certificate validation issue.
With a clean v23.1 installation we cannot reproduce this with the Oxygen default update site URL:
https://www.oxygenxml.com/InstData/Addons/default/updateSite.xml
So first we need to know which HTTPS URL is triggering this for you and what is the exact Java version that you are using with Oxygen. The Java version can be found in Help -> About, System properties, java.runtime.version
To test which URL triggers this, clear the "Automatically accept a security certificate" box and use File > Open URL to try and open the URL in question. Try multiple HTTPS URLS. If it triggers only when trying to install add-ons check each URL from the list in Options > Preferences, Add-ons.
So either it's a different URL that triggers this error, or there is something wrong with the distribution of Java (bad lib/security/cacerts) that your Oxygen distribution is using. I am assuming you haven't messed with the Java runtime bundled with Oxygen (in the Oxygen/jre folder). If you did, you should consider reinstalling Oxygen, as something may be wrong with it.

All the stuff like java.home c:\program files\oxygen xml editor 23\jre was in order. The suggestion to automatically accept the certificate fixed the issue for me. Not exactly the safest approach but it worked!
I don't have a proxy server or VPN I'm running through (I specifically made sure I wasn't logged into the VPN).
I don't understand how my config. stopped accepting Java certificates from Oxygen's Default and Community add-on sites though. Ideas?

What Oxygen version are you running?
Please have a look at Help -> About an the System properties tab. I'm interested in these two properties: java.home and java.runtime.version
You can also try and set the Automatically accept a security certificate [1], even if invalid option and see if the errors go away:

And he answered:
I’m using Oxygen XML Editor 23.1.
I removed the plugin from the extension folder of the com.oxygenxml in the preferences folder then reloaded the plugin through the ‘Install New Add-ons’.
The Git Client appeared and installed OK.
